Jalahot powder is made by grinding this Jalapeño-type hybrid, highly productive and prized for its thick, fleshy skin.
The source pepper, Capsicum annuum, grows on a very hardy, compact, early plant, suited to both greenhouse and open-field growing.
Seeds for fruit production are started between February and March, transplanting after the last frosts, preferably during the warmer periods.
A very productive, disease-tolerant plant with good fruit shelf life after harvest; it needs regular watering, preferably drip irrigation to avoid wetting the leaves.
The conical fruits, about 6 cm long, turn from green to red at full ripeness; given the thick skin, the flesh must be oven-dried for optimal grinding.
A hardy plant resistant to the main diseases; waterlogging and overhead irrigation should still be avoided, as they favor fungal problems.
Jalahot powder has a medium heat level, between 5,000 and 15,000 SHU: excellent for spicy preserves, sauces and bold seasonings.
Rich in vitamin C and capsaicin, an alkaloid with medicinal properties.
