Dried Jamaica Hot Black pepper is a rare dark variant of the Jamaican Scotch Bonnet, with color shifting from deep purple to black during growth, highly sought after by collectors.
plant, of the species Capsicum chinense, is bushy and vigorous, about 60-90 centimeters tall, highly productive in warm climates.
sowing should be done between February and March in a seedbed at 25-28°C, with slower germination than other species; transplant after the last frosts, with fruits ripening in about 100-110 days.
growing requires warm, stable temperatures, full sun exposure and soil rich in organic matter, well-drained; Capsicum chinense favors tropical climates or long, hot summers.
the fruits, with a typical wrinkled shape resembling a small Scottish bonnet, turn from dark green to purple/black before ripening to red.
waterlogging, which favors root rot, must be prevented, along with monitoring for aphids and spider mites, especially under protected cultivation.
Jamaica Hot Black has a very high heat level, between 100,000 and 350,000 SHU on the Scoville scale, with a typical fruity aroma: excellent dried and ground into powder or used in small amounts for Jamaican jerk seasoning and very hot sauces.
dried and very rich in capsaicin, responsible for its extreme heat, it also retains anthocyanins responsible for the dark color and vitamin C.
