Green Alverda Cauliflower is one of the best known and most widespread green-headed varieties, alongside Green Goddess and Vorda. It stands out for its characteristic green head, compact and well formed, coloured by chlorophyll in the inflorescence exposed to light.
Its botanical name is Brassica oleracea var. botrytis, belonging to the Cruciferae family (Brassicaceae). Unlike white varieties, the green Alverda cauliflower plant does not need the head fully shielded from light, since light exposure is exactly what promotes its typical green colouring.
Transplanting is generally done between spring and summer, depending on the desired growing schedule. Its growth cycle is comparable to other mid-season cauliflower varieties, with harvest generally taking place in autumn.
Green Alverda cauliflower prefers medium-textured, cool, well-drained soils with a pH between 6.5 and 7.5. It needs regular irrigation, especially in the early growth stages, to ensure even head development.
Harvest when the florets of the head are still tightly closed and compact, cutting plants at the collar and leaving a few protective leaves for handling.
Keep the soil free of weeds and respect transplanting distances (50-60 cm along the row, 60-80 cm between rows) to encourage even head development and reduce the risk of fungal diseases.
Like other Brassicaceae, it can be affected by downy mildew and bacterial diseases, favoured by prolonged humidity. Cabbage white caterpillars are the most common pests: good weed control and targeted Bacillus thuringiensis treatments help keep them in check.
Green Alverda cauliflower is rich in vitamin C, fibre and minerals such as potassium and phosphorus. The presence of chlorophyll in the head adds to the already rich nutritional profile of this vegetable, also making it appreciated for its appearance in the kitchen.
