Gaeta Puntarelle Chicory, also known as frastagliata di Gaeta catalogna chicory, is a local ecotype traditionally grown in the Formia, Fondi and Gaeta market-gardening areas. Already prized by the ancient Romans, who praised its liver-friendly properties, it stands out for its long, tapered central shoots, known as puntarelle.
The plant forms an elongated head, about 40-50 cm, with broad-ribbed, jagged, light-to-deep green leaves. At the center of the head, numerous upright shoots develop, tender and crunchy, with a pleasantly bitter flavor, making up the most prized and sought-after part of this variety.
Sow broadcast in an open seedbed between late June and mid-July, for an autumn-winter cycle. After about 30 days the seedlings are transplanted, spacing rows about 30 cm apart with 20 cm between plants along the row.
It's a hardy, resilient plant, suited to a range of growing conditions. It prefers cool, well-worked soil rich in organic matter. Manual harvesting of the shoots begins about 40-50 days after transplanting, once the central clusters have reached a good size.
In excessively hot summer months the plant can mature quickly and toughen up (bolt), while in very cold months hard frost can damage the inner shoots, causing rot. Regular watering and mulching help produce more tender, crunchy puntarelle.
Like other chicories, it can be affected by aphids and slugs, as well as fungal rot in cases of prolonged waterlogging. Good airflow between plants and well-drained soil are the best preventive defenses.
Gaeta Puntarelle Chicory is traditionally prepared by cutting and shredding the shoots, which characteristically curl up in cold water, then dressed with oil, garlic, anchovies and vinegar in one of Lazio's most beloved recipes. It's an extremely low-calorie vegetable, rich in vitamins and minerals.
