Cluster eggplant for preserving in oil is a specialised variety, with small fruits grouped in clusters, bred specifically for traditional oil-preserved conserves.
It belongs to the species Solanum melongena, family Solanaceae. A highly productive plant that concentrates numerous small fruits in compact clusters along the same branch.
Sow in a heated seedbed between February and March, with soil temperature between 20 and 30°C; transplant once the seedling reaches 15-20 cm in height.
It prefers fertile, well-drained soil, sunny exposure and regular watering; its high productivity calls for supporting fertilisation throughout the growing cycle.
Harvest while the fruits are still small and firm, the ideal condition for subsequent processing and preserving in oil.
Like other eggplants it can be affected by Colorado potato beetle, aphids and red spider mite; good soil drainage prevents root rot after heavy rain.
The small clustered fruits are perfect blanched and preserved in oil with flavourings such as garlic, chilli and oregano, following the tradition of Southern Italian home preserves.
Made up of over 90% water, cluster eggplant is low in calories and rich in fibre, potassium and antioxidant compounds.
Per 100 grams of fresh product, cluster eggplant provides about 24 kcal, 1 g protein, 5.7 g carbohydrates, 0.2 g fat and 3 g fibre.
