The Savona red onion is an early-cycle, highly productive variety, typical of Liguria. The plant produces large, round bulbs with bright red skin and a very sweet flavour.
Allium cepa Savona red belongs to the Amaryllidaceae family. It is a biennial herbaceous plant, grown as an annual, with hollow blue-green cylindrical leaves. The round bulb, with intense red-purple colour, grows best in light soils free of waterlogging.
Sowing takes place from August to September for autumn sowings aimed at early bulbs, or in spring for later sowings, burying seeds about 1-2 centimetres deep.
Once planted, this variety has no particular requirements: it should be watered moderately and not overexposed to direct sun during the hottest hours. It prefers light, well-drained soil, which favours steady growth.
Being an early-cycle variety, harvesting generally takes place earlier than other red onions. It is advisable to harvest once leaves begin to dry and bend, letting bulbs dry a few days before storage.
It can be subject to downy mildew and neck rot in conditions of excessive soil moisture, so it is important to avoid waterlogging. Common pests include onion fly and thrips.
Thanks to its very sweet flavour, Savona red onion is perfect for raw consumption in salads, but is also excellent cooked, particularly in typical Ligurian dishes such as filled focaccia.
Red onions like this Savona variety are particularly rich in anthocyanins, antioxidant pigments responsible for the red colour. It also has diuretic and detoxifying properties, plus a good vitamin C content.
Per 100 grams, Savona red onion provides about 32 kcal, 1 g protein, 7.3 g carbohydrates (of which sugars about 4.7 g), 0.1 g fat and 1.4 g fibre. It has a good vitamin C content (about 7 mg) and potassium (about 140 mg).
