The white flat May onion is an early short-day variety, typical of Southern Italy, with a flattened bulb, silvery white skin and a very delicate, mild flavour.
Allium cepa white May belongs to the Amaryllidaceae family. It develops a flattened, medium-to-large bulb with thin silvery outer skins and crisp white flesh.
Sowing takes place from August to October, burying seeds about 1-2 centimetres deep in a protected seedbed, before transplanting seedlings into the field in the following months.
An early short-day variety, it requires loose, well-drained soil and regular but moderate watering. Prolonged exposure to direct sun during the hottest hours should be avoided in the early growth stages.
It is harvested in late spring, generally in May, hence its name. It has limited storage life, so it is best consumed fresh shortly after harvest.
It can be subject to downy mildew and neck rot in conditions of excessive soil moisture; common pests include onion fly and thrips.
Its very delicate, mild flavour makes it ideal for raw consumption in salads, but it truly shines when oven-roasted, releasing all its natural sweetness.
Like other white onions, it contains sulphur compounds with antibacterial properties and a good flavonoid content, plus a fair amount of vitamin C and potassium.
Per 100 grams, white flat May onion provides about 29 kcal, 0.9 g protein, 6.5 g carbohydrates (of which sugars about 3.8 g), 0.1 g fat and 1.2 g fibre. It has a good vitamin C content (about 6 mg) and potassium (about 130 mg).
