The Montoro copper onion, a native ecotype of Irpinia (Avellino province), is a traditional Campania agri-food product listed in the Slow Food Ark of Taste, with skins showing characteristic copper reflections.

The Montoro Copper Onion Plant

Allium cepa Montoro copper belongs to the Amaryllidaceae family. The bulb has copper-coloured outer skins and inner flesh with marked white and purple streaks, with an intense aromatic scent.

How to Sow Montoro Copper Onion

Sowing takes place from August to September, burying seeds about 1-2 centimetres deep; the optimal germination temperature is around 20-25°C.

How to Grow Montoro Copper Onion

It prefers well-drained, nutrient-rich volcanic soils, typical of the Irno Valley. The mild, ventilated climate favours bulb development; it also withstands temperature swings well.

Tips for Montoro Copper Onion

Harvesting takes place in the second half of June; the bulbs are left to dry in the field and then stored in well-ventilated wooden structures for curing.

Diseases and Pests of Montoro Copper Onion

It can be subject to downy mildew and neck rot in conditions of excessive soil moisture; common pests include onion fly and thrips.

Uses and Curiosities of Montoro Copper Onion

With a sweet, aromatic flavour, it holds up remarkably well to cooking, making it ideal for soups, long-stewed dishes and traditional Irpinia recipes; also excellent raw in salads or as a preserve.

Properties of Montoro Copper Onion

Thanks to its high dry-matter content, it keeps for a long time while retaining its properties; like other onions, it is rich in sulphur compounds and antioxidant flavonoids.
