Pimenta da Neyde White powder is made from the cream-yellow ripening variant of this productive Brazilian pepper, prized among home growers for its fruity flavour, which carries through well once the pods are dried and ground into powder.
The Capsicum chinense plant is compact, 60-90 cm tall, highly productive, with small elongated pods ripening from green to creamy yellow.
Seeds are started indoors from February to March, transplanting outdoors once night temperatures stay reliably above 15°C.
Growing requires full sun, regular watering without waterlogging, and potassium-rich feeding during fruiting to boost pod yield for drying.
For a quality powder, pick pods at full ripeness, dry them slowly in shade or with a low-temperature dehydrator, and grind only once completely dry to avoid residual moisture affecting shelf life.
Like other Capsicum chinense varieties it can be affected by aphids, spider mites and root rot from excess watering; good soil drainage greatly reduces these risks.
