Monkey's Nipple powder comes from an unusual, collector-favourite pepper variety named for its elongated pods with a rounded tip. It is made by drying ripe pods and grinding them fine, keeping their distinctive aroma and heat.
The Capsicum plant has a bushy habit and produces oddly shaped, elongated pods with a rounded terminal swelling that gives the variety its curious name.
Seeds for pod production are started indoors from February to March, transplanting once the climate is reliably mild.
Growing requires full sun, well-drained soil and regular watering, with potassium-rich feeding during fruiting to boost pod yield.
For a quality powder, pick pods at full ripeness, dry them slowly in shade or with a low-temperature dehydrator, and grind only once completely dry.
Like other Capsicum varieties it can be affected by aphids, spider mites and root rot from excess watering; good drainage greatly reduces these risks.
Monkey's Nipple powder is prized by chili collectors for its distinctive aroma, with a medium-high heat suited to sauces and meat dishes.
It contains capsaicin, responsible for its heat and thermogenic properties, plus vitamin C and carotenoids preserved through drying.
