Aribibi Gusano powder comes from a rare pepper variety native to Bolivia, one of the genus Capsicum's greatest biodiversity centres, known for its sinuous, worm-like pod shape (gusano means worm in Spanish). It's made by drying ripe pods and grinding them fine.
The Capsicum plant, typical of the Bolivian Andean valleys, produces small, twisted pods ripening from green to bright red.
Seeds for pod production are started indoors from February to March, transplanting once night temperatures stay reliably above 15°C.
Growing requires full sun, well-drained soil and regular watering, with potassium-rich feeding during fruiting to boost the yield of the distinctive twisted pods.
Pods should be picked at full red ripeness and dried slowly to preserve colour and aroma, then ground only once fully dry for a fine, stable powder.
Like other Capsicum varieties it can be affected by aphids, spider mites and root rot from excess watering; good drainage greatly reduces these risks.
Aribibi Gusano powder is prized by collectors for its rarity and intense flavour, with medium-high heat suited to sauces and meat dishes.
It contains capsaicin, responsible for its heat and thermogenic properties, plus vitamin C and antioxidants preserved through drying.
