Fish pepper powder comes from a historic Caribbean variety with variegated leaves and pods, traditionally paired with fish dishes. It's made by drying ripe pods and grinding them fine.
The Capsicum annuum plant reaches about 70 cm in height, with striking green and creamy-white variegated leaves.
Seeds for pod production are started indoors from January to April, keeping temperatures constant between 25°C and 28°C.
Growing requires full sun, well-drained soil and regular watering; the plant flowers from June to September with harvest between August and October.
Pods, 3-6 cm long, turn from white streaked with green to yellow, orange and finally red at full ripeness, when they should be picked and dried quickly.
Like other Capsicum varieties it can suffer from aphids, whitefly and root rot in waterlogged soil; good drainage prevents most issues.
Fish pepper powder has a medium-low heat level, traditionally used to season fish, shellfish and oyster dishes.
Rich in capsaicin, it has thermogenic and digestive-stimulating properties, plus vitamin C and antioxidants preserved through drying.
