Milk pepper powder comes from a unique variety, entirely white when ripe. It's made by drying ripe pods and grinding them fine, preserving its distinctive aroma.
The Capsicum annuum plant reaches about 60 cm in height and is still a variety being stabilised, with a unique ornamental look.
Seeds for pod production are started indoors from February to April, transplanting once night temperatures stay reliably above 15°C.
Growing requires full sun, well-drained soil and regular watering, with potassium-rich feeding during fruiting to boost yield.
Pods, which stay a distinctive white colour at ripeness, should be picked and dried quickly to preserve their aroma before grinding.
Like other Capsicum varieties it can suffer from aphids, whitefly and root rot in waterlogged soil; good drainage prevents most issues.
