Cayenne golden powder is made by grinding the golden variant of classic Cayenne, with the same elongated fruits but ripening to a golden-yellow color.
The source pepper, Capsicum annuum, has an upright bushy habit with short internodes, typical of Cayenne varieties.
Seeds for pod production are started between February and March, transplanting after the last frosts.
Growing favors full sun and rich, well-drained soil, with plants spaced at least a meter apart for proper development.
Pods, which turn from green to bright golden-yellow at full ripeness, must be fully dried before fine grinding, yielding a lighter-colored powder than classic Cayenne.
A hardy, resistant plant, it can occasionally be affected by aphids and powdery mildew in poorly ventilated conditions; good air circulation prevents the main issues.
Cayenne golden powder has a medium heat level, estimated between 30,000 and 50,000 SHU, great for sauces, curries and marinades, with a different color touch than traditional red Cayenne.
Rich in capsaicin, responsible for its heat, plus good vitamin C and antioxidant content preserved through drying.
