Black Pearl powder is made by grinding the small dried fruits of this ornamental variety, known for its completely black, glossy leaves and fruits.
The source pepper, Capsicum annuum, has a compact habit with fully black leaves; it originates from a cross between Royal Black and the 86 Arboretum-1 variety.
Seeds for fruit production are started between February and March, transplanting after the last frosts.
Growing favors full sun, a key factor for the anthocyanins responsible for the black color to fully develop.
Small round fruits, which turn red at full ripeness, must be fully dried before fine grinding.
A hardy, undemanding plant, generally resistant to common garden issues; good sun exposure and regular watering support its health.
Black Pearl powder has a medium-low heat level, with a fairly neutral taste and aroma, suited to light decorative and aromatic use in the kitchen.
Contains capsaicin in modest amounts, plus a good supply of vitamin C and anthocyanins preserved through drying.
