Mexican Biker Billy powder is made by grinding this spontaneous hybrid of the classic Mexican pepper, named after TV host and motorcyclist Billy Hufnagle.
The source pepper, Capsicum annuum, is very leafy and robust, with dark green hairy leaves, reaching up to 120 cm in height.
Seeds for pod production are started between February and March; the plant is also quite cold-resistant.
Growing favors full sun and adapts well to both open ground and pots, aided by its sturdy wind-resistant stem.
Fruits, larger and more elongated than the classic Mexican pepper, turn from green to bright red at ripeness and must be fully dried before fine grinding.
A hardy plant, resistant to both wind and cold thanks to its sturdy stem; good sun exposure and regular watering support its health.
Biker Billy powder has an estimated heat level of around 30,000 SHU, with a rich, slightly smoky flavor perfect for hot sauces and preserves.
Rich in capsaicin, responsible for its heat, plus a good amount of vitamin C and antioxidants.
