Mexican golden powder is made by grinding the dried pods of this Mexican variety, with a distinctive fuzz on stem and leaves and golden fruits at ripeness.
The source pepper, Capsicum annuum, takes on a small tree shape about 80 cm tall, leafy and prolific, with few white flowers per node.
Seeds for pod production are started between February and March, transplanting after the last frosts.
Growing favors full sun and well-drained soil, adapting well to both open ground and pots thanks to the plant's compact size.
Pods, golden in color at ripeness, must be fully dried before fine grinding to yield a smooth powder.
A hardy, resistant plant, generally not very susceptible to fungal diseases when grown with good air circulation and no waterlogging.
Mexican golden powder keeps the medium-high heat level typical of Mexican varieties, excellent for flavoring sauces, marinades and traditional Tex-Mex dishes.
Rich in capsaicin, responsible for its heat, plus a good amount of vitamin C and flavonoids.
