Adorno powder is made by grinding the small dried fruits of this versatile Italian variety, prized both for cooking and as an ornamental plant.
The source pepper, Capsicum annuum, is compact with green-purple leaves and conical fruits; in open ground it can reach up to 2 meters in height.
Seeds for fruit production are started between February and March, transplanting after the last frosts.
Growing favors fine to medium-textured soil, rich in nutrients and well-drained, with a pH between 7 and 7.5.
The small conical fruits, which turn from dark green to purple and finally bright red at full ripeness, must be fully dried before fine grinding.
A lack of phosphorus and potassium can cause flower and fruit drop; steady but moderate fertilizing prevents the main issues.
Adorno powder has a medium-high heat level, between 30,000 and 50,000 SHU, with a fruity, enveloping heat, excellent in sauces and marinades.
Rich in capsaicin, responsible for its heat, plus a good amount of vitamin C and anthocyanins in its purple tissues.
