Chile de Arbol powder is made by grinding this Mexican pepper whose name means "tree chili", also known as the "bird's beak" chile.
The source pepper, Capsicum annuum, produces thin pods 5-7.5 cm long, turning bright red at maturity.
Seeds for pod production are started between February and March, transplanting after the last frosts.
Growing requires well-drained soil, rich in organic matter, and full sun exposure.
Pods, harvested once fully red, must be fully dried before fine grinding, to yield a powder with an intense, vivid color.
Waterlogging that favors root rot must be prevented, along with monitoring for aphids and spider mites, especially under protected cultivation.
Chile de Arbol powder has a heat level between 15,000 and 30,000 SHU, with a clean, sharp flavor and smoky, earthy notes, perfect for sauces, marinades and infused oils.
