Artiglio di Drago powder comes from grinding this Italian variety, named for the curved, pointed shape of its fruits, which resembles a dragon's claw.
The source pepper, Capsicum annuum, grows on a compact, bushy plant about 50 centimeters tall, very leafy, with thin but sturdy branches and purple flowers.
Seeds for fruit production are started between February and March, transplanting after the last frosts in a sunny spot.
The plant is highly prolific when grown in direct sunlight with regular watering that avoids waterlogging; it also adapts well to container growing.
The fruits, up to 4 cm long and very fleshy, turn from light green to bright red at full ripeness and must be fully dried before fine grinding.
As with other peppers, waterlogging that favors root rot must be avoided; good drainage and airy positioning prevent the main issues.
Artiglio di Drago powder has a medium-low heat level, around 25,000 SHU, with a sweet flavor that makes it suitable even for those who avoid extreme heat, excellent in sauces, marinades and as a finishing seasoning.
Rich in capsaicin, albeit in moderate amounts compared to other varieties, and a good amount of vitamin C typical of ripe red peppers.
