Saltillo powder is made by grinding this distinctive pepper, whose fruits grow clustered in tufts like a small bouquet.
The source pepper, Capsicum annuum, grows on a small, bushy plant about 50 centimeters tall, very leafy with oval leaves and a sturdy woody stem.
Seeds for fruit production are started between February and March, transplanting after the last frosts; it is a late-maturing variety.
Growing favors full sun exposure and well-drained soil; it also adapts very well to container growing thanks to the plant's compact size.
The small pointed fruits, up to 4 cm long, grow clustered in tufts and turn from green to bright red at full ripeness, reached about 100 days after germination.
Waterlogging, which favors root rot, must be avoided; good drainage and regular but moderate watering prevent the main issues.
Saltillo powder has a medium-low heat level, around 25,000 SHU, with a mild flavor that makes it versatile in the kitchen, excellent in sauces and as a finishing seasoning on many dishes.
Rich in capsaicin in moderate amounts and vitamin C, typical of ripe red peppers.
