Fuoco della Prateria powder is made by grinding the small conical fruits of this US-native variety, also prized as an ornamental plant for its vivid colors.
The source pepper, Capsicum annuum, grows on a small, compact shrub-like plant with a lush crown of dark green leaves and small white flowers.
Seeds for fruit production are started between February and March, transplanting after the last frosts in a sunny spot.
The plant needs high sun exposure and good airflow; it adapts well to mild climates but must be protected from very low temperatures.
The small conical fruits, 2-3 cm long, change color as they ripen, turning from green to purple, orange and finally red, often at the same time on the same plant; they must be fully dried before fine grinding.
Wetting the leaves during watering should be avoided, and fertilizing should wait until the plant starts setting its first fruits, to prevent the main issues.
Fuoco della Prateria powder has a medium heat level, around 20,000 SHU, with a bold fruity flavor that is not extreme, perfect for seasoning sautés and preparing sauces.
