Jamaican Hot Yellow powder is made by grinding this Caribbean Scotch Bonnet-type pepper, known for its distinctive fruity flavor and intense heat.
The source pepper, Capsicum chinense, grows on a robust, very productive plant that yields numerous small lantern-shaped fruits.
Seeds for fruit production are started between February and March, transplanting after the last frosts, with the slower germination typical of Capsicum chinense.
It prefers warm climates and stable temperatures above 15°C, with regular watering; it grows well both in pots and in open fields.
The wrinkled, mushroom-shaped fruits turn from green to bright yellow at full ripeness; they must be fully dried before grinding.
Waterlogging should be avoided as it favors root rot; sensitive to overly low temperatures.
Jamaican Hot Yellow powder has a high heat level, between 100,000 and 200,000 SHU, with a fruity aftertaste: perfect for Jamaican jerk seasoning, hot sauces and Caribbean marinades.
