Jamaican Hot Red powder is made by grinding this Caribbean Scotch Bonnet-type pepper, the red variant that is slightly milder than the yellow one.
The source pepper, Capsicum chinense, grows on a robust, very productive plant that yields numerous small lantern-shaped fruits.
Seeds for fruit production are started between February and March, transplanting after the last frosts, with the slower germination typical of Capsicum chinense.
It prefers warm climates and stable temperatures above 15°C, with regular watering; it grows well both in pots and in open fields.
The wrinkled, lantern-shaped fruits turn from green to bright red at full ripeness; they must be fully dried before grinding.
Waterlogging should be avoided as it favors root rot; sensitive to overly low temperatures.
Jamaican Hot Red powder has a high heat level, between 100,000 and 200,000 SHU, with a fruity aftertaste: perfect for Jamaican jerk seasoning, hot sauces and Caribbean marinades.
Rich in capsaicin and carotenoids responsible for the vibrant red color of the dried fruits.
