Bishop's Crown powder is made by grinding this curious bishop's hat-shaped pepper, with a fruity, crunchy flavor.
The source pepper, Capsicum baccatum, grows on a vigorous, highly productive plant up to one meter tall, with light green leaves and a spreading habit.
Seeds for fruit production are started between February and March in a heated seedbed, transplanting outdoors after the last frosts.
It prefers sunny spots and well-drained soil; it tolerates summer heat well and produces large quantities of fruit until autumn.
The fruits have a distinctive tricorn or bishop's hat shape, ripening from green to bright red, and must be fully dried before grinding.
Watch out for waterlogging and aphids; good air circulation helps prevent fungal diseases.
