Peter Pepper Red powder is made by grinding this curious, unusually shaped pepper with an intense, fruity flavor.
The source pepper, Capsicum annuum, grows on a compact, bushy plant about 60-70 cm tall, highly productive in midsummer.
Sowing takes place between February and March in a heated seedbed, transplanting outdoors after the last frosts.
It prefers sunny, sheltered spots, well-drained soil and regular feeding while fruits develop.
The fruits have a distinctive elongated, curved shape, ripening from green to deep red, and must be well dried before grinding.
Avoid waterlogging and monitor for aphids and mites, ensuring good air circulation between plants.
The powder has a medium-high heat level, around 10,000-20,000 SHU, with fruity notes: perfect for sauces, marinades and meat dishes.
Rich in capsaicin and vitamin C, typical of dried Capsicum annuum peppers.
