Tabasco powder is made by grinding this famous American hot pepper, world-renowned thanks to the hot sauce that bears its name.
The source pepper, Capsicum frutescens, grows on a perennial shrubby plant, very vigorous and productive, reaching up to one meter in height.
Sowing takes place between February and March in a heated seedbed, transplanting outdoors after the last frosts.
It loves warm climates and very sunny spots; in pots it can be overwintered indoors for multi-year growing.
The tapered fruits ripen from green to bright red, growing upright on the branches, and must be fully dried before grinding.
Watch out for waterlogging and aphids; good air circulation prevents rot.
Tabasco powder has a medium-high heat level, around 30,000-50,000 SHU, with a tangy, sharp flavor: ideal for seasoning eggs, meat and Mexican dishes.
Rich in capsaicin and vitamin C, typical of dried Capsicum frutescens peppers.
