Pyramid powder is made by grinding this pepper with its characteristic cone shape, offering a fruity, bold flavor.
The source pepper, Capsicum chinense, grows on a compact, productive plant about 60-80 cm tall, also well suited to pot cultivation.
Sowing takes place between February and March in a heated seedbed, transplanting after the last spring frosts.
It prefers warm climates and very sunny spots; it needs stable temperatures above 15°C for optimal development.
The fruits have a distinctive pyramidal shape, ripening from green to deep red, and must be well dried before grinding.
Avoid waterlogging, which favors root rot; sensitive to low temperatures.
Pyramid powder has a medium-high heat level, around 50,000-100,000 SHU, with fruity notes: perfect for hot sauces and exotic marinades.
Rich in capsaicin and vitamin C, typical of dried Capsicum chinense peppers.
