Pasilla Bajio powder is made by grinding this classic Mexican pepper, dried and used for centuries in traditional cuisine.
The source pepper, Capsicum annuum, grows on a tall, vigorous plant up to one meter, with long, thin fruits.
Sowing takes place between February and March in a heated seedbed, transplanting after the last spring frosts.
It loves warm climates and very sunny spots; it needs well-drained soil and regular feeding.
The long, thin fruits ripen from dark green to blackish-brown, the typical "pasilla" (raisin-like) color, and must be fully dried before grinding.
Watch out for waterlogging and aphids; ensure good airflow between plants.
Pasilla Bajio powder has a medium-low heat level, around 1,000-2,500 SHU, with raisin and licorice notes: essential for mole and traditional Mexican sauces.
Rich in capsaicin and antioxidants, typical of dried Mexican peppers.
