Dried Carolina Reaper Mustard Pepper is the mustard-colored variant of the world's hottest chili pepper, belonging to the species Capsicum chinense. It derives from the same genetic line as the original Carolina Reaper, with essentially identical heat, averaging around 1,500,000-2,000,000 Scoville Heat Units, but with a distinctive yellow-ochre color at ripeness.
The bush is compact and vigorous, 80-100 cm tall outdoors. Leaves are small and dark green, white flowers appear throughout summer. Fruits keep the wrinkled skin and characteristic pointed tail, but turn mustard-colored at full ripeness.
Sow in a heated seedbed between February and March, at constant temperatures of 25-28°C: germination is slow, as with all Carolina Reapers, and can take 3-4 weeks.
Transplant from May, once night temperatures stay above 15°C. It prefers very sunny, sheltered spots, fertile well-drained soil, spaced 50-60 cm apart.
Given its extreme heat, always handle fruits with disposable gloves. In cold climates, container growing allows sheltering it over winter, as it behaves as a perennial.
Like other Capsicum chinense, it can be affected by aphids, spider mites and whitefly under protected cultivation with poor ventilation. Good drainage prevents root rot.
Capsaicin has thermogenic properties and boosts metabolism. The mustard-colored dried pepper is used as powder or concentrated extracts, given its potency requiring minimal doses.
