Dried Carolina Reaper Caramel Pepper is the dried version of the yellow variant of Carolina Reaper, the world's hottest certified chili pepper, belonging to the species Capsicum chinense. It comes from the same selection carried out by Ed Currie of PuckerButt Pepper Company, crossing a Naga Morich with a red Habanero, averaging around 2,000,000 Scoville Heat Units.
The bush is compact and vigorous, 80-100 cm tall outdoors. Leaves are small and dark green, white flowers with greenish centers appear throughout summer. Fruits keep the typical wrinkled skin and characteristic pointed tail, turning golden yellow at full ripeness.
Sow in a heated seedbed between February and March, keeping temperatures constant at 25-28°C: germination is slow and can take 3-4 weeks.
Transplant from May, once night temperatures stay above 15°C. It prefers very sunny, wind-sheltered spots, fertile soil rich in organic matter.
Given its extreme heat, identical to the red Carolina Reaper, always handle fruits with disposable gloves. For the dried version, the drying stage should be done away from direct drafts and excessive heat sources.
Like other Capsicum chinense, it can be affected by aphids, spider mites and whitefly, especially under protected cultivation with poor ventilation.
Capsaicin has thermogenic properties and boosts metabolism. Dried Carolina Reaper Caramel pepper is used as powder, sauces or concentrated extracts, given its potency requiring minimal doses even for experienced palates.
