Dried Carolina White Pepper

Dried Carolina White Pepper is the dried version of the white/cream variant of Carolina Reaper, the world's hottest chili pepper, belonging to the species Capsicum chinense. Selected by Ed Currie of PuckerButt Pepper Company from the same Naga Morich x red Habanero cross, it shares the extreme heat of the original reaper, up to 2,200,000 Scoville Heat Units.

The Carolina White Plant

The bush is compact, 70-100 cm tall, with small dark green leaves and white flowers with greenish centers. Fruits keep the wrinkled skin and typical scorpion-tail shape, but turn from green to a cream/ivory-white color at full ripeness, instead of the classic red.

How to Sow Carolina White

Sow in a heated seedbed between February and March, keeping temperatures constant at 25-28°C: Capsicum chinense germination is slow, often 3-4 weeks.

How to Grow Carolina White

Transplant from May, once night temperatures stay stably above 15°C. It prefers full sun, wind shelter and fertile, well-drained soil rich in organic matter.

Heat Level and Care Tips for Carolina White

Heat level is identical to red Carolina Reaper: always handle fruits with disposable gloves. During drying, keep the product away from direct drafts and excessive heat sources to preserve color and aroma.

Like other Capsicum chinense, it can be affected by aphids, spider mites and whitefly, especially under protected cultivation with poor ventilation.
