Dried Carolina Reaper Chocolate Pepper is the dried version of the dark brown variant of Carolina Reaper, the world's hottest certified chili pepper, belonging to the species Capsicum chinense. It comes from the same selection by Ed Currie (PuckerButt Pepper Company), averaging around 1,569,300 Scoville Heat Units with peaks up to 2,200,000.
The bush is compact and vigorous, 80-100 cm tall, with small dark green leaves and white flowers with greenish centers. Fruits keep the wrinkled skin and typical scorpion tail of the reaper, but turn a deep chocolate-brown shade at full ripeness instead of the classic red.
Sow in a heated seedbed between February and March, keeping temperatures constant at 25-28°C: Capsicum chinense germination is slow, often 3-4 weeks.
Transplant from May, once night temperatures stay stably above 15°C. It prefers full sun, wind shelter and fertile, well-drained soil rich in organic matter.
Heat level is identical to red Carolina Reaper: always handle fruits with disposable gloves. During drying, keep the product away from direct drafts and excessive heat sources to preserve color and aroma.
Like other Capsicum chinense, it can be affected by aphids, spider mites and whitefly, especially under protected cultivation with poor ventilation.
Capsaicin, responsible for the heat, has thermogenic properties and boosts metabolism. Dried Carolina Reaper Chocolate pepper, with fruity notes recalling cocoa, is used as powder, sauces or concentrated extracts, always in minimal doses.
