Dried Genghis Khan Brain Pepper is the dried version of an Italian super hot of the species Capsicum chinense, created by AIASP (Italian Association of Chili Pepper Enthusiasts and Scholars) with the goal of a chili that is extremely hot but flavorful. It reaches about 1,400,000-1,500,000 Scoville Heat Units, with heat that hits fast and lingers.
The plant is sturdy and large, able to exceed 120 cm, with a non-woody but very resistant light green stem and normal foliage but few flowers. It is very prolific. Fruits are small, about 4 cm long and wide, with an extremely wrinkled surface resembling a brain, sometimes with a small tail.
Sow in a heated seedbed between February and March, keeping temperatures constant at 25-28°C: Capsicum chinense germination is slow, often 3-4 weeks.
Transplant from May, once night temperatures stay stably above 15°C. It prefers full sun, wind shelter and fertile, well-drained soil rich in organic matter.
Given its high heat, which comes from an interior rich in placenta with few seeds, always handle fruits with disposable gloves. During drying, keep the product away from direct drafts and excessive heat sources.
Like other Capsicum chinense, it can be affected by aphids, spider mites and whitefly, especially under protected cultivation with poor ventilation.
Capsaicin, responsible for the heat, has thermogenic properties and boosts metabolism. Dried Genghis Khan Brain pepper, with a spicy, lingering flavor, is used as powder, sauces or concentrated extracts, always in minimal doses.
