Dried Big Yellow Mama Pepper is the dried version of the yellow variant of the famous Big Black Mama, belonging to the species Capsicum chinense, created by American breeder Troy Primeaux, also known for the 7 Pot Primo. Extreme heat, with values between 1,000,000 and 1,500,000 Scoville Heat Units, paired with a fruity aroma and citrus notes.
The plant is a large, well-branched, highly productive bush, 1 to 1.5 meters tall, yielding over 30 fruits per harvest. The fruits are large and heavy, up to 30 grams each, with skin that can be smooth or slightly bumpy, ripening to a bright, intense yellow.
Sow in a heated seedbed between February and March, keeping temperatures constant at 25-28°C: Capsicum chinense germination is slow, often 3-4 weeks.
Transplant from May, once night temperatures stay stably above 15°C. It prefers full sun, rich well-drained soil, regular watering and supportive fertilization throughout the season.
The capsaicin content is extremely high: always handle with disposable gloves, avoiding any contact with eyes and mucous membranes. During drying, keep the product away from direct drafts and excessive heat sources.
Like other Capsicum chinense, it can be affected by aphids, spider mites and whitefly, especially under protected cultivation with poor ventilation.
Capsaicin, responsible for the heat, has thermogenic properties and boosts metabolism. Dried Big Yellow Mama pepper, with an intense aroma and fruity flavor with citrus hints, is used as powder, sauces or concentrated extracts, always in minimal doses.
