Dried Big Riot Chocolate Pepper is the dried version of the chocolate variant of this super-hot pepper belonging to the species Capsicum chinense, characterized by bumpy fruits that turn a deep dark brown at maturity.
The plant is vigorous and productive, with irregular, wrinkled fruits that turn from green to chocolate brown at full ripeness, rich in capsaicin.
Sow in a heated seedbed between February and March, keeping temperatures constant at 25-28°C: Capsicum chinense germination usually takes 2-4 weeks.
Transplant from May, once night temperatures stay stably above 15°C. It prefers full sun, fertile well-drained soil, regular watering and periodic fertilization.
The heat level is very high: disposable gloves are essential when handling the fruits, avoiding contact with eyes and mucous membranes.
Like other Capsicum chinense, it can be affected by aphids, spider mites and whitefly, especially under protected cultivation with poor ventilation.
The capsaicin in the fruits has thermogenic properties and supports metabolism. Dried Big Riot Chocolate pepper, with an intense flavor and earthy notes typical of dark varieties, is used as powder or in concentrated sauces.
