Dried 7 Pot White Pepper is the dried version of the white variant of the famous 7 Pot peppers, super-hot chilies native to Trinidad and belonging to the species Capsicum chinense, with bumpy fruits that turn a cream-ivory color at maturity.
The plant is vigorous, with irregular, wrinkled fruits that remain white-cream colored even at full maturity, a distinctive trait compared to other 7 Pot varieties.
Sow in a heated seedbed between February and March, keeping temperatures constant at 25-28°C: Capsicum chinense germination usually takes 2-4 weeks.
Transplant from May, once night temperatures stay stably above 15°C. It prefers full sun, fertile well-drained soil, regular watering and periodic fertilization.
The heat level is very high: disposable gloves are essential when handling the fruits, avoiding contact with eyes and mucous membranes.
Like other Capsicum chinense, it can be affected by aphids, spider mites and whitefly, especially under protected cultivation with poor ventilation.
The capsaicin in the fruits has thermogenic properties and boosts metabolism. Dried 7 Pot White pepper, with an intense flavor and fruity notes, is used as powder or as a base for very hot sauces.
