Dried Scotch Bonnet Yellow Pepper is the yellow variant of the famous Scotch Bonnet, a Caribbean cultivar belonging to the species Capsicum chinense, named for its resemblance to a Scottish tam o' shanter cap.
The plant grows in a small tree shape, tall and sturdy, with fleshy fruits shaped like a squashed hat that turn from green to intense yellow at full maturity.
Sow in a heated seedbed between February and March, keeping temperatures constant at 25-28°C until germination, which usually takes 2-3 weeks.
Transplant from April to June, once temperatures start to rise steadily. It prefers full sun or partial shade, shelter from wind, permeable fertile soil, and a small stake to support the stem.
The heat level is very high (about 100,000-350,000 SHU): gloves are essential when handling the fruits, avoiding contact with eyes and mucous membranes.
It can be affected by aphids, spider mites and whitefly; avoiding wetting the foliage during watering reduces the risk of fungal disease.
The high capsaicin content gives strong thermogenic and metabolism-stimulating properties. Dried Scotch Bonnet Yellow pepper, prized for its sweet fruity taste combined with extreme heat, is used ground into powder or flakes for Caribbean sauces and chicken dishes.
