Dried Habanero Red Savina Pepper is a historic cultivar of the species Capsicum chinense, selected by Frank Garcia in California from an Orange Habanero plant with unusually red and hot fruits.
The plant, 60-90 cm tall, produces fruits with a characteristic rounded, lantern-like shape, 3-5 cm long, which turn a deep bright red color at maturity.
Sow in a heated seedbed between February and March, keeping temperatures constant at 25-28°C until germination, which usually takes 2-3 weeks.
Transplant from April to June, once temperatures start to rise steadily. It prefers full sun or partial shade, shelter from wind, permeable fertile soil, and a small stake to support the stem.
The heat level is extreme (up to 577,000 SHU, Guinness World Record holder from 1994 to 2007): gloves are essential when handling the fruits, carefully avoiding contact with eyes and mucous membranes.
It can be affected by aphids, spider mites and whitefly; avoiding wetting the foliage during watering reduces the risk of fungal disease.
The high capsaicin content gives strong thermogenic and metabolism-stimulating properties. Dried Habanero Red Savina pepper, once the world's hottest recorded chili with a fruity, citrusy flavor, is used ground into powder or flakes for very spicy sauces.
