Dried Habanero Chocolate Pepper, also known as Black Congo, is a Capsicum chinense cultivar originally from Jamaica, prized for the characteristic dark brown color of the fruits at maturity.
The plant is medium-sized, reaching a height of 60 to 90 cm, with a stem that branches out at the top forming a dense, deep green bush; the fruits, with the typical lantern shape, turn from green to brownish-black shades at maturity.
Sow in a heated seedbed between February and March, keeping temperatures constant at 25-28°C until germination, which usually takes 2-3 weeks.
Transplant from April to June, once temperatures start to rise steadily. It prefers full sun and constant light exposure, permeable fertile soil kept consistently moist, and a small stake to support the stem.
The heat level is medium-high (about 200,000-425,000 SHU): gloves are essential when handling the fruits, carefully avoiding contact with eyes and mucous membranes.
It can be affected by aphids, spider mites and whitefly; avoiding wetting the foliage during watering reduces the risk of fungal disease.
The high capsaicin content gives strong thermogenic and metabolism-stimulating properties. Dried Habanero Chocolate pepper, prized for its faint tropical fruit and dark chocolate aromatic note, is used ground into powder or flakes for very spicy sauces.
