Dried Rocoto Red Pepper, also called Manzano for its apple-like shape, belongs to the species Capsicum pubescens, distinct from Habaneros (Capsicum chinense) and native to the Andean regions of Peru and Bolivia.
The plant can grow quite large, reaching up to 2 meters in height, with stem and leaves covered in the fine hairs characteristic of the species; it produces purple-blue flowers and black seeds, unlike other peppers. The fruits, with thick, fleshy pulp, turn from green to red at maturity.
Sow in a heated seedbed between February and March, keeping temperatures constant until germination. Being a cross-pollinated species, it is advisable to grow several plants together to obtain seeds.
Transplant in late winter to early spring. Unlike other peppers, Rocoto tolerates brief frosts and temperature drops well, making it more suited to cool climates; it prefers well-drained, rich soil with constant watering.
The heat level is medium (about 30,000-100,000 SHU), lower than Habaneros but still significant: gloves are recommended when handling the fruits, avoiding contact with eyes and mucous membranes.
It can be affected by aphids, spider mites and whitefly; avoiding wetting the foliage during watering reduces the risk of fungal disease.
The high capsaicin content gives strong thermogenic and metabolism-stimulating properties. Dried Rocoto Red pepper, with the thick pulp typical of the pubescens species, is used ground into powder or flakes for fruity, spicy sauces.
