The dried Aji Charapita Red pepper is the original, authentic form of this wild variety, native to the Amazon regions of Peru, Ecuador and Brazil. Unlike the more common yellow variant, this type ripens from green to a bright, glossy red, with rounded fruits about 1.5 cm in diameter.
plant belongs to the species Capsicum chinense and has a bushy, vigorous habit, reaching over 1 meter in height. It is extremely productive, capable of generating hundreds of small fruits per plant throughout the season.
sowing should be done between February and April, in a heated seedbed at constant temperatures of 26-28°C, typical of Capsicum chinense varieties. Fruits reach full ripeness in about 90-100 days from transplanting.
growing favors full sun exposure and fertile, well-drained soil. Being a perennial plant if sheltered from cold, it can be kept for several seasons in a pot, though the stem benefits from support given its height.

like other Capsicum chinense, it is generally resistant to bacteria and pests, but can occasionally be affected by aphids and red spider mites, especially under protected cultivation. Good air circulation between plants helps prevent the main fungal issues.
Aji Charapita Red reaches a medium-high heat level, estimated between 30,000 and 65,000 SHU on the Scoville scale, hotter than the classic yellow variety. Dried, it is used ground or whole to flavor salads, rice, beans and spicy sauces.
