The dried Cayenne pepper is one of the most widely grown and best-known peppers in the world: long, thin fruits, slightly curved, resembling the shape of a cigarette.
plant, belonging to the species Capsicum annuum, has an upright, bushy habit with short internodes and can reach a meter in height; it benefits from staking to support the main stem.
sowing should be done between February and March, in a seedbed at 22-26°C, transplanting after the last frosts. The first fruits ripen after about 70 days from sowing.
growing favors full sun exposure and rich, well-drained soil, with plants spaced at least a meter apart for proper development.
the color shifts from green to bright red at full ripeness, and the 10-16 cm long fruits can be harvested in succession throughout summer for drying in traditional strings.
a hardy plant, resistant even to cold temperatures when properly protected; it can occasionally be affected by aphids and powdery mildew, controlled with good air circulation between plants.
Cayenne reaches a medium heat level, estimated between 30,000 and 50,000 SHU on the Scoville scale. Dried and ground it is the base ingredient of the famous cayenne pepper spice, perfect for sauces, curries and spicy marinades.
like all dried hot peppers, Cayenne is rich in capsaicin, responsible for its heat and known for properties stimulating circulation, as well as a good amount of vitamin C and antioxidants.
