The dried Cayenne Golden pepper is the golden-yellow variant of the classic Cayenne: the same long, thin cigarette-shaped fruits, but ripening to a golden-yellow color instead of red.
plant, belonging to the species Capsicum annuum, has an upright, bushy habit with short internodes and can reach a meter in height; it benefits from staking to support the main stem.
sowing should be done between February and March, in a seedbed at 22-26°C, transplanting after the last frosts. The first fruits ripen after about 70-80 days from transplanting.
growing favors full sun exposure and rich, well-drained soil, with plants spaced at least a meter apart for proper development.
the color shifts from green to bright golden-yellow at full ripeness, a detail that makes this variety especially eye-catching when paired with the traditional red Cayenne in the garden.
a hardy, resistant plant, it can occasionally be affected by aphids and powdery mildew in poorly ventilated conditions; good air circulation between plants prevents the main issues.
Cayenne Golden reaches a medium heat level, estimated between 30,000 and 50,000 SHU on the Scoville scale, in line with the original variety. Dried and ground it produces a lighter-colored cayenne pepper, great for sauces, curries and marinades.
like all dried hot peppers, Cayenne Golden is rich in capsaicin, responsible for its heat, as well as a good amount of vitamin C and antioxidants.
