The dried Hot Lemon pepper, also known as Lemon Drop or Aji Limon, is a variety originating from the Peruvian Andes with a distinctive bright yellow color and a delicate citrus aftertaste.
plant belongs to the species Capsicum baccatum, less widely grown than other species, developing well over a meter in height with elongated fruits about 5-6 cm long.
sowing should be done between February and March, in a seedbed at 22-26°C, transplanting outdoors between March and May after the last frosts.
growing favors full sun exposure and fertile, well-drained soil, with plants spaced about 70 cm between rows and 50 cm within the row for proper development.
the distinctive spicy aroma reminiscent of citrus, particularly lemon, makes this variety highly prized in Peruvian cuisine, where it is also called Kellu Uchu.
generally hardy, this variety can be affected by aphids and red spider mites under protected cultivation; good air circulation between plants prevents the main fungal issues.
Hot Lemon's heat level is high and lingering, with estimates ranging from 30,000 SHU up to over 200,000 SHU depending on the source and growing conditions. Dried, it is excellent ground to flavor fish dishes, sauces and salads.
like all dried hot peppers, Hot Lemon is rich in capsaicin, responsible for its heat, as well as a good amount of vitamin C and the volatile aromatic compounds behind its citrus scent.
