The dried Mexican Biker Billy pepper is a hybrid that arose spontaneously in the field among classic Mexican pepper plants, taking its curious name from the American TV host and motorcyclist Billy Hufnagle.
plant, of the species Capsicum annuum, is very leafy and robust, with dark green, oval, slightly elongated leaves covered in fine hairs; it can reach up to 120 cm in height, taking on the shape of a small tree.
sowing should be done between February and March, in a seedbed at 22-26°C; the plant is also resistant to cold temperatures, which brings germination forward by up to a month compared to other varieties.
growing favors full sun exposure and adapts well to both open ground and pot cultivation, aided by its sturdy stem resistant to wind.
compared to the classic Mexican pepper, Biker Billy's fruits are larger and more elongated, often with a curved shape reaching up to 10 cm in length, turning from green to bright red at full ripeness.
a hardy plant, resistant to both wind and cold thanks to its sturdy stem; good sun exposure and regular watering support its health and productivity.
Biker Billy reaches an estimated heat level of around 30,000 SHU on the Scoville scale. Excellent both fresh and dried, with a rich, slightly smoky flavor that makes it perfect for hot sauces and preserves.
like all dried hot peppers, Biker Billy is rich in capsaicin, responsible for its heat, as well as a good amount of vitamin C and antioxidants.
