Of Asian origin, Pak Choi cabbage has an open shape, a white base and thick, crunchy leaves that turn green towards the tip.
Its botanical name is Brassica rapa subsp. chinensis, belonging to the Cruciferae family (Brassicaceae). The leaves form an open rosette, with a fleshy white central rib and a bright green leaf blade.
Sowing can take place in both spring and late summer, in cool, well-drained soil; the growth cycle is quite fast.
Pak Choi prefers mild temperatures and regular watering, to avoid excessively high temperatures triggering premature bolting.
Keep the soil constantly moist without waterlogging, and harvest the plants while still young to best enjoy their crunchiness.
Like other Brassicaceae, it can be affected by cabbage white caterpillars, flea beetles and aphids, especially in the early growth stages.
This vegetable is rich in minerals, vitamins and protein, with a delicate, sweet flavour. It can be eaten both cooked and raw, for example in salads.
