Wind Bor green curly kale, like its red counterpart Redbor, is valued for its excellent nutritional and organoleptic qualities, with strongly curled, bright green leaves.
Its botanical name is Brassica oleracea var. sabellica, belonging to the Cruciferae family (Brassicaceae). The leaves are deeply frilled and curled, an intense bright green, with a decorative appeal as well as culinary use.
Sowing is best done in late summer for an autumn-winter harvest, in well-worked, fertile soil.
A hardy, cold-resistant plant, Wind Bor kale retains its organoleptic qualities even after the first frosts, which actually enhance its flavour.
Ensure a sunny position and fertile soil to support the development of the curly leaves, harvesting them progressively from the bottom up.
Like other Brassicaceae, it can be affected by cabbage white caterpillars and aphids, although the texture of the curly leaves makes it less appealing to some pests.
