One of the most ancient cabbages, Torzella Salernitana is a hardy, resilient species with thick, edge-curled leaves, large in size and dark green in colour.
Its botanical name is Brassica oleracea, belonging to the Cruciferae family (Brassicaceae), a Campania variant of torzella, one of the most ancient cabbages of the Mediterranean. The sturdy stem produces numerous axillary shoots with fleshy, curly leaves.
Sowing traditionally takes place in midsummer, for transplanting in late summer and a successive harvest starting in late autumn.
Highly cold-resistant, this rustic variety performs best precisely during the coldest months, when the shoots become more tender and flavourful.
Harvest the shoots progressively as they form, to ensure a continuous supply through to late spring.
Like other Brassicaceae, it can be affected by cabbage white caterpillars and aphids; the rustic nature of the variety makes it fairly resistant regardless.
Rich in minerals and vitamins, particularly vitamin C, folic acid and potassium, torzella is fat-free and perfect for hearty winter soups.
