White Carrot has the same color as the original wild carrot, with a squat, less regularly shaped root compared to orange varieties, with a flavor slightly reminiscent of parsnip.
Botanical name Daucus carota, family Apiaceae. It is the variety closest in appearance and flavor to the wild carrot from which all the colorful varieties grown today are derived.
Sow from March to July, directly in the field, in rows 25-30 cm apart, burying seeds about 1 cm deep.
It prefers loose, well-drained soil free of stones. Thin out leaving 4-5 cm between plants, to encourage regular root development.
Compared to orange varieties it has a lower sugar content, but is rich in minerals that give it a stronger, more distinctive flavor.
Regular watering helps limit the natural tendency toward irregular shape typical of this variety, favoring more uniform roots.
Like other carrots, it is prone to carrot fly and root rot in case of waterlogging; good crop rotation prevents most issues.
Lacking the colored pigments of other varieties, it is still rich in vitamin C and minerals, with a lower calorie content compared to sweeter orange carrots.
